The primary difference between a succulent vs dry bean is how long the crop stays intact before harvest:
- Dry beans are left on the vine to produce fully mature seeds within the pod. Dry beans are typically hard, removed from the pod, and have a long shelf life. They may also be referred to as “soup beans”.
- Succulent beans are harvested in advance of seed and pod maturity. They are highly perishable and require refrigeration to maintain shelf life. Some types of succulent beans have edible pods, while others may be removed from the shell prior to consumption.
